Sausage & Cheese Quiche

This quiche is tasty and definitely a crowd favorite! There are many variations to this dish. For instance, all veggies and goat cheese, no potatoes but croutons for a crust, spinach and mushrooms. Just use what you have on hand and you won’t be disappointed.

Feeds 6 people with leftovers

1 bag of frozen dice potatoes

3 cups shredded cheddar cheese (or more😊)

12 large eggs

whole milk ( or low fat milk and heavy cream)

2 lbs cooked and crumbled sausage

salt & pepper to taste

Cook sausage and set aside. Crack 12 eggs in a bowl. Add salt, pepper, and milk (or milk, heavy cream combo). Whisk together.

First, cover the bottom of a 13 x 9 pan with a thin layer of diced potatoes. Then sprinkle a thin layer of cheese. * I do find it best to crisp up the potatoes in the pan or in the oven with a little salt & pepper before adding to the bottom of the pan. *

Next, pour the egg/milk mixture in the 13 x 9 pan, and top with crumbled sausage & cheese, and bake until done. About 40 minutes on 350 degrees or until the middle is puffed up. Enjoy!
